Cups poha (the thick kind) |

Medium sized potato |

Table spoons safflower oil |

Teaspoon cumin seed |

Teaspoon mustered seed |

Pinch hing |

Curry leaves, fresh or dried |

Teaspoon turmeric |

Handful of peanuts |

Small green chili, chopped fine |
| 1
Small handful cilantro leaves, chopped |
| ½
Teaspoon salt |
Method
of Preparation
Wash
the poha twice and drain well. Set aside. Wash and peel the potato.
Grate it medium fine. Heat a frying pan on medium and add the oil.
When hot add the cumin seeds, mustered seed, curry leaves and hing.
Let the seed pop. Then add the rest of the ingredients, except the
poha. Cook over medium heat until the onion is translucent, stirring
constantly to keep from sticking. Add the salt and poha, mix well.
Cover; turn off heat and let sit for a few minutes.
Note
The
light and dry nature of potatoes provokes vata,
so they should eat only a small quantity with extra ghee.
