Ingredients

1 medium head cabbage, chopped fine

6 cups)

2 tablespoons safflower oil
|
|
½ teaspoon black mustered seeds
|
|
½ teaspoon cumin seeds
|
|
1 pinch hing
|
|
¼ teaspoon turmeric
|
|
½ small green chili, chopped fine
|
|
¼ teaspoon salt
|
Method of Preparation
Wash the cut cabbage twice. Heat a saucepan on
medium heat and add the oil, mustered seeds, cumin seeds, hing ,
turmeric and green chili. Sauté until the seeds pop. Add the
cabbage and salt. Stir and cover. Simmer on low heat until the
cabbage is tender, but slightly crisp, about 8-10 minutes.
Note
Cabbage is bitter, astringent, cooling and pungent. It is light,
digestive and kindles gastric fire. Due to the binding and dry
qualities, it can cause constipation and gas.
Although this recipe does balance tridosha, vata should eat it in
moderation. The turmeric, hing and salt help alleviate the
quantities, it can cause constipation and gas.
Medicinal Use
Acts as a mild diuretic.
